lots of pumpkins

i've put some pumpkin seedlings on the compost heap in spring and we had a rather wet summer. now i'm facing a flood of kuri pumpkins!
i'm quite happy about my harvest but although i gave away what i could i'm afraid i'll have to consume more than my body weight in pumpkin this year. hope i won't get pumpkin poisoning!
i usually roast it in the oven with various spices and a little oil, and i've already made soup with chicken yesterday. maki's recipe for puree with creme fraiche is on the list for try-out and i'll stock up on allspice and evaporated milk and try making pumpkin pie (that's quite an adventure because i've never had any and don't know what it's supposed to be like).
what would you all do with a great big heap of pumpkins?

I'd do exactly what you're doing. Plus you can cook, mash, then freeze them, for later use in pie or soup.

Not exactly food, but if you have loads of them, perhaps you could try to carve jack-o-lanterns after using the pulp for cooking!

Muffins with pumpkin in are good too. Add mashed pumpkin and the spices that go in pumpkin pie, and use brown sugar. You need to adjust the liquids down a bit to compensate for the moisture of the pumpkin.

I make winter squash pizzas (I usually use butternut squash, I don't know if pumpkin would work) by sprinkling some mozzarella on the pizza dough, then just add squash, rosemary (the rosemary is what really makes the dish), a bit of olive oil and some parmesan.
You can also make nice savory pies with pumpkin. I particularly like pumpkin and blue cheese pie -- the filling is just pumpkin puree with cream and eggs topped with crumbled blue cheese.
People sometimes make Pumpkin Chili too, which is like a regular chili con carne with pumpkin puree in it. I've never tried it though.

I definitely bought some carrot and pumpkin bread the other day which was mega tasty and I am sure if you made some it would be even better. Be something different to do with it as well and I am sure there will be recipes on the webs

Squash freezes very well. Just cut it into chunks, blanch them in boiling water for a couple of minutes, cool and pack into freezer bags. Then you can use them whenever you like. See this page which has instructions plus a recipe for traditional simmered kabocha. Also try searching for "kabocha" for other ideas on JustBento/Hungry. (This pudding is quite good, even though it's fairly low in sugar and so on.)

It sounds like you already have a good idea of how to use up your pumpkin, so all I can add to that really is try to freeze some for when you don't have pumpkin and it sounds good to make.

Pumpkin ice cream is another treat. I make a pumpkin custard and then put in it the ice cream maker. It doesn't use up a lot of pumpkin, but it makes a nice and different treat.

My favourite is pumpkin risotto, it's already nice creamy and velvety because of the pumkin, but you can add cheese if you like to
