Hi everyone!
It's been a long time... My job can be so stupidly absorbing sometimes...
Anyway I hope I'll be back to bentoing soon (or at least I'll be able to have lunch at home everyday until summer) so I'm thinking about heat-friendly recipes... then hummus came to my mind.
I know it can be eaten with pita bread but I find it kind of boring. So, some ideas anyone?
Also, I need to know how long would hummus last in my fridge. I prepare it with chickpeas, some olive oil and lemon juice. (other hummus recipes are also welcome! ^^)

I freeze it in iceblock trays. Lasts forever that way.

Hummus is nice as a dip for raw vegetables, or as a spread on flatbread (use it as a base, like mayonnaise or butter, then pile on shredded veg. or ham or whatever you like, and roll up).
Traditional hummus has tahini (ground sesame paste) in it. Also grated or roasted and pureed garlic is a delicious addition. Here's my standard hummus recipe.

I like hummus on a veggie sandwich, instead of the mayo. Or with raw vegetable like Maki said. But I also make my own whole grain pita chips, which are usually a hit at parties, to eat with hummus.
A while back I made some curry flavored hummus, with just the curry spices mixed in with minced and cooked garlic and onion. It was very good with some asparagus, bell pepper, and sprouts on a sandwich.

You can also use it instead of cheese to make vegan pizza. Not quite the same, but very tasty.
That sounds really good I have never heard of that one before, only the fake cheese (which imo is gross) and nut pastes. I will have to try that next time I make pizza.
It's a cool tip but I don't really think my husband will want to try it o_o

Hummus is a great sandwich ingredient, as mentioned. It can also be flavored with olives, roasted red peppers, chiles, spinach, or anything else that strikes your fancy. It's good in wraps. A scoop of it can be placed on a salad for extra protein.

Humus, rocket, and roasted pepper in a bagel is really delicious and easy to make.
These are so simple I'm kind of embarrassed to post them.
It's a shame that bagels (certainly good ones) are impossible to find in Spain, Alice's suggestion sounds delicious!
I have a huge fondness for bagels with grated raw carrot, hummus, toasted sesame seeds and fresh spinach leaves.
Yesterday I ended up with a big, still warm, flute of French bread (similar to a barra of Spanish bread) and spread it with hummus, some really good tomato slices &crunchy lettuce. My husband then grumbled that what he actually wanted was something 'meaty', so I quickly fried a Quorn 'beef' burger cut into pieces and added that too. It was REALLY good - I made one for myself too.
Later on I tried another combination (it was a hot day and I didn't feel like doing much cooking). I replicated the taste of a kebab by spreading the inside of a lightly toasted pitta bread pocket (beware the hot steam!) with hummus and adding tomatoes, some raw onion as well as shredded raw cabbage which I had mixed up thoroughly with a teeny bit of mayo and lots of grated/crushed garlic. Again the burgers (finely sliced) were used. It definitely hit the spot!
Just for interest, the singer from The Killers was interviewed on British TV on Friday and he said one of his favourite things was sandwiches made from (Sainsbury's) hummus and salt & vinegar crisps (potato chips). And I thought it was just bands who play in smaller venues who ate this way!
Mmmmmm all this talk about hummus.

Long enough. I usually freeze it in ice-block containers though (I have silicon ones that make heart or apple shaped ice-lumps), and put an ice-block of it in my bento. Not to keep it fresh, but just because a batch of hummus is too big for me to eat and that's the easiest thing to do..
Hey now, you can get hummus in Hamamatsu, in Shizuoka Japan,
at Tirnan Og craft pub, KK House, and Slowporch in Hamakita.
They have many flavors to choose from. The local brand is called Satorijava Traders Hummus.
